Introduction

Ingredients

    1 T EVOO
    1/2 tsp cracked Black Pepper
    1-2 garlic cloves, depending on your taste
    1/2 med red onion chopped
    1/2 large red pepper, cut into strips
    1/2 tsp dried basil(or several leaves of fresh)
    1 15 oz can stewed tomatoes
    1 15 oz can garbonzo beans, drained and rinsed thoroughly.

Directions

Heat olive oil with black pepper(I prefer fresh ground). Saute onion, red pepper and garlic in olive oil till soft. Drain and rinse beans thoroughly. Add beans and tomatoesand basil to sauted vegetables. Simmer till hot through and through.

Serving Size: 1-1/2 cup
