Ingredients

    4 C cooked brown rice
    1 C ff vegetarian refried beans
    16 oz ground turkey, browned and drained
    1 T taco seasoning
    1 med zucchini diced
    1 med onion diced
    1 1/4 c salsa
    1/2 c 2% fat shredded cheese

Directions

If you don't have cooked brown rice on hand, prepare as directed. Brown turkey, drain and add taco seasoning. Saute zucchini and onions. Add rice and salsa and combine well.

Spray casserole dish with non stick cooking spray. Layer 1/2 of rice mixture in bottom of dish. Top with refried beans, then meat, and top with remaining rice mixture. Top with cheese.

Bake at 350 for 20-30 minutes.
