Number of Servings: 8


    3 cups fresh spinach leaves - packed
    6 tbps finely chopped shallots or green onions
    1/2 cup finely chopped water chestnuts
    3/4 cup light (7% BF) sour cream
    1/2 tsp salt
    1/2 tsp cayenne pepper (optional)


Put spinach, sour cream, salt and cayenne pepper in food processor or blender and blend until smooth. Transfer to a bowl and stir in shallots (green onions) and water chestnuts.
Refrigerate for 2 or more hours before serving.
Serve in a hollowed out sour dough bread bowl or just a dish. Serve with fresh carrots and celery for dipping or chunks of sour dough bread (not included in calorie count) or crackers. Makes about 8, 1/2 cup servings.
