Introduction

Need a little cornbread to crumble into your bean soup? Yum yumm! You can add 1/2c sugar if you like sweet cornbread, but I left it out in the nutritional calculations. This is VERY low sodium! Ingredients

    Butter, unsalted, 2 tbsp, melted and cooled
    Egg, fresh, 2 large
    Milk, 1%, 1 cup
    corn meal, enriched, yellow, 1.25 cup,
    All-Purpose White Flour, 1 cup
    Featherweight Baking Powder, 3 tsp

Directions

Preheat oven to 400degrees F. Spray a square baking pan.

Whisk together butter, eggs, and milk in large bowl. Add remaining dry ingredients and mix well. You can add 1/2c sugar if you like sweet cornbread, but you would need to add that into the nutritional calculations.

Batter will be very thick. Pour quickly into prepared pan and place in hot oven.

Bake for at least 30 mins until starting to brown on top.

(I ended up having to bake mine for an hour, but my oven might be off; I'm not sure if it's the oven, the other things cooking in the oven, or if this just needs more baking time than 30 mins.)

    I was really glad to find this recipe - I had no idea where to start. I did add 1/2 cup of sugar, and worried about it being so thick, so I added 2 tbsp of sour cream, which added 15mg of sodium. (It added a little more moisture to the mix) I cooked it exactly 30 min. Great recipe!! - 2/18/13

    I added 2 TBL of Greek Yogurt and 1/2 cup sugar. 30 minutes baking time. Excellent recipe. - 6/21/15

    I made this cornbread yesterday. Usually, my cornbread is really crumbly. This is the best tasting cornbread ever! The texture was just fantastic an did I mention that it was delicious. This is one of the best recipes I tried and liked yet!!!!! - 10/12/13
