    1 small spaghetti squash, halved
    2 T olive oil
    1/2 red onion, chopped
    1/2 yellow onion, chopped
    3 T chopped garlic
    2 sm zucchini, chopped
    2 sm yellow squash, chopped
    1 red bell pepper, chopped
    1 yellow bell pepper, chopped
    1/2 cup carrots, chopped
    1/2 cup celery, chopped
    1 24 oz jar marinara sauce
    1 8 oz pkg mozzarella cheese, shredded


Bring enough water to cover the spaghetti squash to a boil. Cook for 10-15 minutes. In the meantime, heat the oil in a large skillet. Add both onions and garlic, saute until tender. Add next 6 ingredients and cover. Cook until soft, about 10 minutes. Drain spaghetti squash, scoop out seeds and fork out flesh. Add to pan with other veggies with 3/4 jar of marinara sauce. Cook until heated. Spray a 13 x 9 baking dish with cooking spray. Pour veggie mixture into pan and spread the remaining marinara sauce over. Top with cheese and bake at 350 for 15 minutes or until cheese is bubbly. Broil to brown cheese if desired.
