    1.74 pounds scallops
    16 ounces mushroom caps

    2 Tbls lemon juice
    1/4 cup olive oil
    1 clove minced garlic
    1 tsp dried tarragon

    Optional: lime slices to use in between mushrooms and scallops on the skewers.


Thaw scallops or buy fresh.
Pop stems off of mushrooms.

Whisk together lemon juice, Olive oil, garlic, and tarragon. Pour over scallops and mushrooms and let sit for at least 30 minutes, turning over twice.

Place mushrooms and scallops on grilling skewers. Grill for 8 minutes, turning every few minutes and brushing with the excess marinade. Use medium-high heat.
