Ingredients

    1 tsp
    Beef roast abt 1 1/2 lbs
    8 med potatoes, peeled and cut into large bite-sized pieces
    1 small onion, peeled and sliced in small wedges
    1 can swanson beef broth, 14 oz

Directions

Put crock pot on to heat. In a heavy pan, add oil and heat until shimmering. Sear roast on all sides. Place meat in Crock Pot. put onions in the pan the meat was seared in, stir until they start to pick up the color in the pan, then add potatoes. Cook for a few minutes, then add the broth. Bring to a boil. Cook for about 15 minutes, then add to the meat. Cook on high for about 2 1/2 to 3 hours.
