Spicy Italian Soup Spicy Italian Soup
Number of Servings: 12


    1 lb mild Italian sausage
    1 tsp red pepper flakes
    4 slices bacon
    1 onion diced
    2 - 3 cloves garlic
    1 med red bell pepper
    8 cups chicken or vegetable broth
    2 - 3 med. potatoes thinly sliced
    2 zucchini's cubed
    1 can diced tomatoes
    1 can white beans
    1 bunch spinach
    1 cup cream
    salt and pepper to taste


Brown sausage in skillet with pepper flakes
Cook bacon in dutch oven.
Drain most of grease and crumble bacon in skillet.
Add garlic, onion and bell pepper and saute until soft
Pour in broth and bring to boil
Add remaining vegetables (except spinach) and sausage, boil for 20 minutes until vegetables are cooked.
Stir in spinach and cream, serve when spinach is wilted.
Season with salt and pepper to taste
