    8 oz. Chicken breast, boneless & skinless
    1/2 tsp. freshly ground black pepper
    2 cloves of garlic, minced
    1/4 tsp salt
    1 medium shallot or onion, minced
    1/2 tsp. Kosher salt
    1 cup thinly sliced mushrooms
    2 TBSP. white cooking wine
    1/4 cup reduced-fat chicken broth
    2 TBSP. minced fresh chives, or scallion greens


Heat oil in a medium skillet over medium heat. Add chicken & cook, turning once or twice - watch for burning. & done. Transfer to a plate & tent with foil to keep warm.

Add shallot to pan & cook, stirring until fragrant. Add mushrooms & stir until tender. Pour in white wine & simmer until almost evaporated. Pour in broth & cook until reduced by half. Stir in cream & chives & return to simmer. Return the chicken to the pan, turn to coat with sauce & cook until heated through.
