Introduction

You can use 3 cups in any combination of carrots and apples. Sometimes I use 3 cups of apples but they do get very soft. I have also used whole wheat flour which makes a dryer muffin. Not as desirable. Store in refrigerator as they are very moist. I freeze them until ready to eat. You can use 3 cups in any combination of carrots and apples. Ingredients

    Baking Soda, 2 tsp (remove)
    Salt, .5 tsp (remove)
    Cinnamon, ground, 1 tsp (remove)
    Nutmeg, ground, 1 tsp (remove)
    Carrots, raw, 2 cup, grated (remove)
    Apples, fresh, 1 cup, quartered or chopped (remove)
    Pecans, .5 cup, chopped (remove)
    *Canola Oil, .5 cup (remove)
    Vanilla Extract, 2 tsp (remove)
    Granulated Sugar, .75 cup (remove)
    *Flour, white, 2 cup (remove)
    Egg, fresh, 2 medium (remove)

Directions

Combine wet ingredients together.
Combine dry ingredients together in another bowl except pecans.
Combine both wet and dry together to form batter. Mix well but do not over beat.
Grease muffin pans. Place batter in muffin cups. ( I recommend not using liners since you want the muffins to have a nice coating on them.)
Put chopped nuts on top of muffins.
Bake 350 degrees until nicely brown.
Wonderful.
