Introduction

Ingredients

2 Banana, fresh
1 tsp. Vanilla Extract
2 cups Old Fashioned Quaker Oatmeal
1/2 tsp salt (1/4 works better) Salt
1/4 cup Dates, pitted, chopped
1/4 cup Walnuts, chopped
2 tsp. Cinnamon, ground
Directions
Heat oven to 350 degrees. Lightly grease a 9x9 inch pan. Peel and mash bananas thoroughly until no chunks remain (I used a food processor). Stir in vanilla, oats, salt, dates and nuts.
Pat mixture into a baking pan and sprinkle cinnamon or nutmeg on top. Bake for 30 minutes or until edges begin to crisp.
Place on a rack to cool. When cooled, cut into bars and enjoy with a cup of tea.
For a sweeter version, you could add more dates or add in a little Agave Nectar. You can also add coconut flakes, currents, raisins or any other fruit or nut.
