Number of Servings: 5


    Lentils, .5 cup, rinsed
    Beans, red kidney, .5 cup, rinsed
    Chickpeas (garbanzo beans), .5 cup, rinsed
    Onions, raw, 1 small, chopped
    Peppers, sweet, red, fresh, .25 medium, chopped
    Carrots, raw, 1 large, sliced
    Celery, raw, 1 stalk, medium, sliced
    Pureed Tomatoes, 1 cup
    Water, spring, 32 fl oz
    Extra Virgin Olive Oil, 4 tbsp
    To taste:
    Pepper, black
    Oregano, ground
    Bay Leaves


Carmelize onion, carrot, celery, and red pepper with olive oil in a medium stock pot.
When done, add tomato puree, water, beans and spices;
Simmer until beans are tender (about 1.5 hrs)
Remove bay leaves before serving

Spinach, escarole, kale or any other green can be added!

Serving Size: Makes about 5 - 1 cup servings
