While this might be a little high carb for Induction, this is still a delicious recipe for low-carbers. It is high protein and has a healthy dose of potassium. I like to add some heavy cream at the end, but if you are trying to reduce calories you can omit it. Ingredients

    1 Tbsp Oil
    1 tsp black pepper
    2 lbs chuck, cut into 1-in cubes (use kitchen shears!)
    1 cup diced onion
    8 oz canned mushrooms
    1 cup beef broth
    2 Tbsp mustard powder
    6 oz Greek Yogurt
    3 Tbsp heavy cream (optional)

Directions

Heat the oil on high in a large wok or pot. Add the pepper and let it fry for 30 seconds, then add the beef and sear it. Take the beef out of the wok and fry the onions until brown.
Once brown, add the mushrooms and cook for three minutes.
Take the onions and mushrooms out of the wok and pour in the beef broth. Once it is warm, add the mustard powder and mix it well. Add the beef, mushroom, and onion mixture and mix well, then cook until the meat is done. Add the Greek yogurt and sour cream at the end, making sure it does not boil.

Serving Size: Makes 6 generous servings
