Ingredients

4 Boneless Skinless Chicken Breasts
2 Medium Potatos
About 4 Tbsp Parmesan Cheese
3 tbsp Blue Bonnet Light Margarine (lowest calories I could find)
1/2 cup Kraft Fat Free Mozzarella Cheese Shredded
1 tbsp Minced Garlic
Directions
Pre Heat Oven to 350
Line baking dish (I used medium corning ware) with foil. Leave plenty extra to fold into pocket later.
1:Cut a pocket into all 4 Chicken Breasts.
2:Lightly dust pocket of chicken breasts with Parmesan Cheese and stuff with Mozzarella. Place Chicken in Foil.
3:Wash and cut potatoes to desired size. Spread over Chicken in foil.
4:In small pan melt butter and add Garlic and Salt to butter.
5: Poor Butter mix over Potatoes and Chicken.
6:Dust Potatoes and Chicken with Parmesan Cheese.
7:Fold excess foil over Chicken and Potatoes to make pouch.
8:Bake for 50 Minutes
