    2.5 cups Organic Whole Wheat Pastry Flour
    3/4 cup Sugar
    Baking Powder, 2 tsp
    Ginger, ground, 1 tsp
    Baking Soda, 1/4 tsp
    Salt, 1 tsp
    Butter, unsalted, .1/4 cup
    Vegetable Oil, 1/4 cup
    Sweet Potato, baked and pureed or mashed, 1 cup
    Egg, fresh, 1 large
    Buttermilk, lowfat, .1/2 cup


Preheat oven to 375
grease or line 12 muffin tins

Combine flour, sugar, baking powder, ginger, baking soda, and salt in large bowl

In a separate bowl whisk butter, oil, sweet potato, egg, and buttermilk.

fold wet ingredients into dry until just mixed.

Fill muffin tins three-quarters full. Bake 20 - 25 mins.

Serving Size: makes 12 muffins
