Introduction

Tastes like a dessert- eats like a meal! This is super yummy and high in protein, low in fat ! It's also easy and provides a dose of antioxidants with the dark chocolate. Best of all of you have bread( or any kind) that needs to be used- this is a GREAT way to use it and milk! Your entire family- even the picky ones- will be yumming this one down! it also makes a fabulous holiday breakfast casserole that has all the taste and non of the guilt! Ingredients

    32oz mixed whole grain bread( I used whole grain french, honey wheat and a freshly ground dakota bread( which is a mixed grain bread) But ANY whole grain bread you like will work- whatever you have left...you can even use leftover bagels or croutons

    5 cups egg substitute
    6 cups skim milk
    2.66 cups Splenda
    .25 cups olive oil
    2 Tbls cinnamon
    3Tbls Hershey's " Special dark" cocoa powder * you can use reg if you don;t have the dark- just add an extra Tbls.

    3 Tbls vanilla
    .5 cup raisins packed

    You'll also need a 9x13 casserole dish as well as an 8x8 one.

Directions

Spray both 9x13 and 8x8 casserole dishes with cooking spray and preheat oven to 350

break bread into small pieces and distribute evenly into baking dishes.

Sprinkle raisins over bread.

In a large bowl- whick all remaining ingredients and pour over the 2 baking dishes util you have the bread in both evenly covered. **The liquid should just barely come to the top of the bread. Lightly press the bread into the mixture to make sure it;s coated. Spray the top of the bread mixture well with cooking spray and bake one hour- or until knife inserted in center comes out clean.

Serve warm. ** this is a moist custardy bread pudding- you shouldn't need additional sauces- but if you like serve with chocolate syrup or low sugar syrup.

I normally serve sliced or wedged oranges and morningstar maple soy sausage or bacon on the side with this.

Serving Size: makes 16 slices(9x13 nakes 10 and 8x8 makes 6)

    I PROMISE I WILL MAKE THIS, BUT I WILL MAKE A SMALLER AMT....SOUNDS YUMMY! A HAVE RECENTLY MADE TWO DIFFERENT ONES, WHOLE WHEAT BREAD & A CINNAMON RAISIN MAKES 6 LARGE SLICES WITH ABOUT THE SAME NUTRITION VALUES.....I WILL LET YOU KNOW WHEN I MAKE THIS GOODIE! - 10/25/11
