    Olive Oil
    Salt & Pepper to taste


heat a 12 in skillet over low heat. Lightly pound meat with to even thickness. Place chicken cutlets and tenderloins in medium bowl, drizzle with oil, season wiht salt & pepper to taste, and toss to coat evenly.

Turn on exhaust fan, and increase heat under pan to a strong medium-high. When skillet is very hot, add chicken. Cook turning only once, until chicken is well browned and just cooked through, 5 to 7 minutes for cutlets and about 4 minutes for tenderloins.
