    1 C bran buds type cereal
    1/2 C yellow cornmeal
    1/2 C uncooked old-fashioned rolled oats
    3/4 C boiling water
    1 C buttermilk
    1/4 C molasses
    1/4 C Smart Balance or other margarine, melted & cooled
    2 T. honey
    2 T. canola or vegetable oil
    1 egg (or substitute), lightly beaten
    1 1/2 t. vanilla
    1 C whole wheat flour
    1 1/2 t. baking soda
    1/4 t. salt
    3/4 C chopped, pitted dates


Preheat oven to 375 F. Grease twelve 3 1/2 to 4 oz. muffin cups.
In a large bowl, stir together bran cereal, cornmeal, and oats; stir in boiling water and let stand 5 minutes. Stir in buttermilk, molasses, butter, honey, oil, egg and vanilla until blended. In another large bowl, stir together flour, baking soda and salt. Make a well in center of dry ingredients; add grain- buttermilk mixture and stir just to combine. Stir in dates.
Spoon batter into prepared muffin cups; bake 20 to 25 minutes, or until a cake tester (toothpick) inserted in center of one muffin comes out clean.
Remove muffin tin to wire rack. Cool 5 minutes before removing muffins from cups; finish cooling on rack. Serve warm or cool completely and store in an airtight container at room temperature. These muffins freeze well.
