    Olive oil
    small onion, chopped
    2 carrots, peeled & chopped
    2 stalks celery, chopped
    1 clove garlic, minced
    1 jar roasted red peppers, chop a few peppers
    1 box chicken stock
    1 pkg frozen meatballs
    1 pkg frozen spinach
    1 small pkg tortellini


Heat olive oil in a dutch oven/big pot. Add the onion, garlic, carrots, celery, and roasted red peppers. Season with salt, pepper, and add a bay leaf. Cook about 5-7 minutes. Add chicken stock and enough water to fill 2/3 of the pot. Add frozen meatballs (however many you want) and frozen spinach (I do half a package). Season again with salt & pepper, then bring soup to a boil. Once boiling, add pkg. of tortellini and cook until pasta is done.
