Number of Servings: 10


    5 chicken quarters, minus skin, cut into drumstick & thigh
    1/2 tsp salt
    1/4 tsp pepper
    1 1/2 tsp oregano
    1 Tbsp oil
    1 lime's worth of juice
    1 onion, chopped
    1 bell pepper, chopped
    2 garlic cloves, minced
    1 tsp turmeric
    3/4 tsp cumin
    1 1/2 c rice (I like basmati)
    1/2 c ham, diced (I use a thick-cut slice of Virginia ham from my local deli - ask for a #4 cut)
    2 c chicken broth
    1 can diced tomatoes, undrained
    1/2 c edamame
    1/2 c chopped green olives with pimiento


Brown chicken with oil in pan, adding salt, pepper & 1 tsp oregano. Remove chicken, sprinkle with lime juice & keep warm.
Add onion, bell pepper & garlic to pan, cook until tender. Add spices, cook a minute. Add rice & ham, cook another minute. Add broth & tomatoes, bring to a boil.
Place chicken pieces into pan, push into rice mixture. Cover & reduce heat, simmer for 18 minutes or until liquid is nearly absorbed. Add peas, cook 3 minutes.
Remove from heat, sprinkle olives on top.

Serving Size: Serving: 1 piece of chicken, 1/2 c rice
