A creamy curry sauce that only takes minutes.

The calories are figured with regular coconut milk but you can use light.

Ingredients

    1 T. olive oil
    1 t. crushed red pepper
    2 cloves garlic, crushed
    1.5 T curry powder
    2 T. soy sauce
    2 t. splenda
    1 c. coconut milk
    1/2 c. cut fresh basil (optional)

Directions

Heat olive oil in pan, add red pepper & garlic, stir fry for 15-30 seconds. Add curry, soy sauce, splenda & coconut milk. Stir well. Bring to boil. Cook until sauce thickens (1-1&1/2 mins). Add basil. Use as sauce on stir fry or steamed veggies.

Serving Size: makes 4- 1/4 c. servings

    Incredible!
    This is great for ketogenic dieters trying to add fats w/o carbs and proteins. It's great over broccoli, cauliflower, white fish, etc. I skip the Splenda. Thanks, DESIRE713. - 9/24/13
