    1 3/4 cup flour
    3/4 tsp baking soda
    1 1/4 tsp cream of tartar
    1/2 tsp salt

    2 eggs
    1/2 cup (1 stick) softened unsalted butter
    2 ripe bananas, mashed
    3/4 cup sugar
    1/2 cup chopped pecans


Sift together the dry ingredients.

Cream the butter with the sugar until fluffy. Add the eggs one at a time. Then mix in the mashed bananas. Add the dry ingredients and mix well. Stir in the pecans (optional)

Pour into a greased loaf pan.

Bake for about 45 minutes at 350 until a toothpick poked into the center comes out clean.

Makes about 12 slices.
