Introduction

Ingredients

    - Skinless Boneless Chicken Breast, 32 oz
    - Bread, pita, whole-wheat, 7 pita, large (6-1/2" dia)
    - Oikos Organic Greek Yogurt, Plain, 5.3 oz
    - Cucumber (with peel), 1/4 cucumber (8-1/4")
    - Olive Oil, 2 tbsp
    - *Lemon Juice, 6 fl oz
    - *Fresh Mint, 3 tbsp, minced
    - *Greek Seasoning, 4 tsp
    - Garlic, 6 cloves chopped
    - White Rice, long grain, uncooked, 1-1/2 cup

Directions

Make Marinade: Mix 4 cloves of chopped garlic, Greek seasoning, olive oil, and lemon juice in a bowl.

Cube raw defrosted chicken breast into 1.5" cubes. Mix in marinate and refrigerate for at least one hour.

Make tzatziki: in a food processor, mix a quarter of a seeded chopped cucumber, two cloves of chopped garlic, and a good pinch of mint until no chunks are left. In a small bowl, stir Greek yogurt and chopped mixture together. Refrigerate for 30 min to let flavors meld.

Grill chicken chunks. Cook rice according to package instructions. Mix the rice and tzatziki sauce according to taste. Feel free to leave some of the sauce to add to the pita sandwiches. Stuff the rice mixture and chicken into the pita.

You can add lettuce and tomato as desired, but make sure to add the calorie count.

Serving Size: makes 18 half pitas
