This is my mom's famous macaroni and cheese recipes-creamy and delicious it's a hit with kids and grownups alike. While you can't say it's guilt free macaroni it certainly fills the cozy comfort food niche without filling your calorie count! Number of Servings: 8

Ingredients

    1 cups uncooked macaroni
    4 T butter
    4 T flour
    tsp salt
    1 1/4 cup milk (I use FF skim)
    cup chopped onion
    8 oz Velveeta (2%), cubed

Directions

Cook and drain macaroni. In a saucepan, melt butter, blend in flour, salt, and pepper. Add milk, cook and stir until thick and bubbly. Add onion and cheese. Stir until melted. Mix cheese with macaroni. Pour into a 1 quart casserole and bake at 350 for 35 to 40 minutes.

Serving Size: Makes 8 servings.
