Introduction

Ingredients

    3.25 cup Chicken Broth
    3 boneless, skinless chicken breast, diced
    0.5 cup olive oil
    1.25 cup onions, diced
    1.25 cup carrots, diced
    1 cup celery, diced
    0.5 cup all pupose flour
    1 tea salt
    1 tea black pepper
    0.5 cup skim milk
    2 -defrosted ready to bake pie crusts ( 9") rolled to cover 13X 9 casserole dish
    1 egg white, beaten

Directions

1. Preheat oven to 375°F
2. Heat broth to a simmer then add chicken. Poach chicken until cooked. Take slotted spoon and separate the chicken from the broth. Set both aside.
3. In a large saucepan, heat the oil.
4. Sauté the onions, carrots, and celery, until onions are translucent.
5. gently add flour and mix well
6. cook over low heat 6-8 minutes, stirring gently. Make sure to scrape bottom of pan so roux doesn’t burn.
7. Increase heat and start adding broth in 3 separate additions. After each addition, whisk well and bring to simmer before adding next portion of broth to pot.
8. Add salt and pepper. Cook over low heat for 10 minutes.
9. In small saucepan warm the milk and add to pot. Stir well.
10. Mix in chicken and stir all ingredients well in pot.
11. Pour the pot mixture into a 13 X 9 casserole dish, then add the crust on top.
12. Brush crust top with beaten egg white.
13. Bake for 30- 40 minutes, until crust is golden brown.
15. Enjoy!
