Ingredients

    2 tsp. apple cider vinegar or 3 Tbsp. buttermilk
    2 Tbsp. milk
    3/4 c. honey
    1/2c. butter
    2 large ripe bananas
    1 tsp. baking soda
    pinch of salt
    2 c. whole wheat flour
    1/2c. nuts
    1/2c. egg substitute

Directions

Add the vinegar to the milk and let set. Cream the honey with the butter until smooth. Beat the eggs into the honey, creaming well. Add the bananas after mashing well with a fork.

Combine the soda to the milk and vinegar mixture; stir well. Add this to the mixutre and then add the salkt, whole wheat flour and nuts. Bake at 350 degrees for 45 minutes or until a knife inserted in the center comes out clean. Serve warm or with butter.

  • Very nice and simple recipe. Some of the obligatory spices such as cinnamon were left out, but I added them anyway and it was delicious. - 1/21/08
