    8 Small Potatoes
    8 Slices Bacon
    1 Cup Light Sour Cream
    1/2 + 1/4 Cup Colby Jack Cheese
    1/4 Cup Fresh Chives
    1 Tbsp Fresh Parsley


Wash and pierce potatoes. Cook in microwave for 15-18 minutes until cooked through. Cut each potato in half; scoop insides into a bowl. Add sour cream and mash up the potatoes. Then add 1/2 cup cheese, the parsley and most of the chives (leave a small amount for topping the potatoes); mix thoroughly. Spoon the mixture into the potato skins and place in a baking dish.
Bake in oven at 400 degrees for 12-15 minutes. Top with remaining cheese and chives. Best served warm.
