    1 3/4 C. water
    3/4 C Red lentils
    1/4 Cup Chopped onions
    1/2 t Salt
    1/2 t ground cumin
    1 clove garlic, minced
    1-2 T snipped fresh cilantro
    4 Totada Shells
    2 C Assorted Veggies
    3/4 Cup Shredded monterey jack cheese


1. In a meduim saucepan stir together the water, lentils, onion,salt,cumin and garlic. Bring to boiling, reduce heat and simmer covered for 12 to 15 minutes or until lentils are tender and most otthe the liquic is absorbed. Use a for to mash the lintils, stir in cilantro.

2. preheat brolier. spread lentil mixture on tostada shell top with vegetable and cheese

  • This is SO good. I used zucchini, yellow squash, green onions, and broccoli. Everyone was incredibly impressed. I don't think I'll ever go back to using refried beans on tostadas again. - 1/31/08
