My husband and I love this with a sandwich for a light dinner. My husband and I love this with a sandwich for a light dinner.
Number of Servings: 4


    2 cans of beef broth (can use reduced sodium if you like)
    1/2 LB fresh white mushrooms, sliced
    1/2 LB fresh portabella mushrooms, sliced
    1 medium onion, chopped
    1/2 cup uncooked pearled barley
    1 tsp Mrs. Dash Garlic & Herb Seasoning Blend


Spray 2 quart saucepan with Pam Olive Oil cooking spray. Cook onion over medium heat until they begin to soften. Add mushrooms and cover. Cook for 10 minutes, stirring once. Add beef broth and bring to a boil. Add barley, return to a boil, reduce heat and simmer until the barley is cooked, about 30 min. Add seasoning and enjoy!
