Ingredients

    egg substitute
    chopped mushrooms
    scallions
    chopped fresh baby spinach leaves
    chopped tomatoes
    cheddar cheese
    non-stick cooking spray

Directions

Makes one large veggie stuffed omelette! Spray non-stick spray into a non-stick pan and saute mushrooms and spinach until mushrooms are tender and spinach is wilted. Add egg substitute and cook as you would a regular omelette. Add tomatoes, cheese and scallions and fold over. Add salt and pepper as needed. For an even lighter version use reduced fat cheese. Omit scallions if you don't like scallions, or saute yellow/white onion with mushrooms and spinach. Enjoy!
