    1 small spaghetti squash (cooked and extracted)
    1/2 tsp minced garlic
    2 tbsp olive oil
    1/2 onion chopped
    2 small cans tomato sauce
    1 can tomato paste (I used the kind with italian herbs included)
    1 small zucchini chopped
    5 Or 6 mushrooms sliced
    1 cup fat free cottage cheese
    12 ounces mozzarella


Saute the onions and garlic in the olive oil. Add the chopped zucchini and sliced mushrooms. Stir in the tomato sauces and the tomato paste. Mix well. Add the spaghetti squash and cottage cheese. Stir well. Place in baking dish and stir in about 4 ounces of the cheese. Spread the remaining cheese on top and bake for 20 min or until hot and bubbly.
