Number of Servings: 12


    2.5 cups whole wheat pastry flour
    1/2 cup sugar
    2 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp salt

    1/4 cup melted butter
    1/4 cup vegetable oil
    1 cup mashed over-ripe banana
    1 egg beaten
    1/2 cup buttermilk

    1/2 cup chopped walnuts


Preheat oven to 375
Grease 12 muffin tins or add liners

Whisk wet ingredients (butter, oil, banana, egg, buttermilk) in mixing bowl

Mix dry ingredients (flour, sugar, baking powder, baking soda, salt) in a large bowl.

Fold wet ingredients in to dry ingredients until just combined.
Add walnuts to batter

fill 12 muffins tins with batter

bake for 20 - 25 mins

Serving Size: makes 12 muffins
