    • 4 fillets of Bass
    • 1 cup fish stock
    • 1 shallots, minced and divided
    • 1 tbsp. butter
    • ¼ cup cider vinegar
    • ½ cup white wine
    • 1 tbsp. tomato paste
    • 1 tbsp. cream
    • Salt and Pepper to taste


1. Put bass, half the shallots and fish stock in deep skillet and turn heat to medium.
2. Poach for 4 minutes on each side and reserve cooking liquid.
3. In a second smaller skillet melt butter and sweat shallots.
4. Add cider vinegar and reduce by ¾.
5. Add white wine and reduce by ½
6. Add tomato paste and sauté for 3 minutes.
7. Add reserved cooking liquid and reduce by half
8. Add lemon juice.
9. Add cream and turn off heat.
10. Salt and pepper to taste
11. Serve fish topped with sauce

Notes: Fish can also be prepared seared.
