    1.5 lbs of ground chuck
    1 to 1.5 lbs of ground pork
    2 cups chopped onion
    2 cloves of garlic chopped
    2 cups chopped celery
    chopped peppers (1 each - green, red, yellow)
    1 can Rotel seasoned tomatos with green chilies (chili fixin's)
    1 can no salt added tomato paste
    1 bottle V8 46 oz - low sodium spicy hot
    1 can dark red kidney beans
    1 can pinto beans
    1 can small red beans
    2 cans black beans
    1 can spicy chili beans

    3 TBs chili powder
    1/2 TB cumin
    2 TB brown sugar
    2 packets white sugar
    Black peper, cayenne pepper to taste
    1-2 jalapeno peppers seeded and finely chopped (to taste)


Brown meat with onions and garlic (drain grease)
Drain and rinse all cans of beans (except spicy chili beans)
Add beans, V8 Juice. Rotel tomatoes, and tomato paste
Simmer at least 1/2 hour
Add rest of vegetables and all seasonings
Cover and simmer at least 45 minutes (or until veggies are to the softness that you like).
This dish freezes well.

This recipe makes a HUGE pot of chili... with lots of leftovers in mind. Make it in the largest pot you have (or split into 2 large pots - make one mild and one medium/hot)

Serving Size: makes about 20 - 1 cup servings
