    12 manicotti noodles
    1 can fat free refired beans
    1.5 cups reduced fat shredded mexican or cheddar cheese
    2 cans enchilada sauce (small total 2.5 cups)
    1 can boiling hot water


Pre-heat oven to 350F
Mix beans and half of cheese
Stuff been and cheese mixture into mancotti shells, using either a cake decorator or a ziploc bag with the corner cut off. Place filled noodles in a 9 x 13 inch glass baking dish
Mix the enchilada sauce with the hot water and pour over the noodles,making sure to get the hot sauce on top of each noodle.
Bake for 30 mins, then top with remaing cheese and bake 5 more minutes.

Garnish with sour cream, green onions and sliced black olives.
