A comforting soup, great with a salad and bread. A comforting soup, great with a salad and bread.
Number of Servings: 6


    1 Tbsp. butter
    1/2 c. celery, diced
    1 medium onion, diced
    1 medium potato, peeled and diced
    1 large carrot, peeled and shredded
    1 pint FAT FREE Half & Half
    2 tsp. salt
    1 lb. bay scallops (or sea scallops, cut into small pieces)


In a large saucepan, heat butter, celery, onion and potatoes. Cook at medium-low for 10 minutes. Add shredded carrot and cook 5 more minutes. Add Half & Half and salt; cover and simmer 20-25 minutes, until vegetables are tender. Add scallops and heat for 5-10 minutes until scallops are cooked.

Makes 6 8oz servings.
