    Make a sponge!
    3/4 cup whole wheat flour
    3/4 cup 110 F Water
    1 tsp celtic sea salt

    1/2 cup Quinoa Flour
    1 1/2 cup unbleached bread flour
    2 tbs Flaxseed, milled
    1 tbs Honey


at least 3 hours a head, make the sponge by proofing the yeast in the 110 F water, when foamed, add the whole wheat flour and salt and stir with a fork until gluten starts to strand. Let set at least 3 hours, covered in a warm place.

Scrape sponge into bowl, add remaining water (warm), add quinoa and flaxseed, then add bread flour a 1/2 cup at a time, until the dough forms a soft ball.
Turn onto floured surface and kneed for about 5 mins, adding flour to keep from getting sticky.

Form into a ball and lightly spray with pam, and cover and let rest for at least 30 mins to an hour.

Preheat oven to 375 F
Roll out dough into the shape of the pan you are using, folding the edge and sealing to make the lip of the crust. Let rest for 10 mins. Add filling of choice and bake for 15 to 18 mins until golden brown.
