Ingredients

1 Eggplant,peeled & cut into 1 inch cubes
Green Peppers, 1/4c diced
Onion, 1/2 c chopped
Canned diced tomatoes, 15oz, the whole can undrained
Francesco Rinaldi To Be Healthy Sauce, Tomato & Basil, the whole jar
Colonna Grated Parmesan & Romano Cheese, approx 4TBS
Italian Seasoning, to taste
Garlic Powder, to taste
Salt&pepper, optional
Directions
Saute green pepper & onion in a small amount of olive oil. Add canned tomatoes,pasta sauce & seasonings. Add eggplant cubes & stir well to coat. Cook on medium heat, stir occasionally until eggplant is cooked. Usually takes about 10-15 minutes. Add Parmesan&Romano cheese. Stir well. Serve and enjoy!
