    2 Tb. Olive Oil
    C. chopped onion
    1 tsp. salt
    8 eggs
    C. shredded cheddar cheese
    6 C. fresh spinach
    3 C. red potatoes, in cubes
    tsp. fresh ground black pepper


Heat oil in a medium skillet over medium high heat. Add potatoes and sprinkle with tsp. salt & pepper. Cook till lightly browned, 10-12 mins. Add spinach and onions, stir till beginning to brown. In a medium bowl, beat eggs with remaining salt. Pour over potato-spinach mixture. Cook 5-7 mins. , lifting edges to let egg flow under. Lower heat and cover, cook till top is set. Sprinkle with cheese and serve immediately. Serves 4, 3345 calories, 19 g. fat.
