    1 cup diced onion
    1/2 c diced celery
    1 apple peeled seeded and diced
    4 oz butter
    1 bunch broccoli, chopped
    6 tbsp curry powder
    1 qt chicken broth
    1 qt water
    1 c heavy cream
    1 cup sour cream


Melt butter. Add apples, onions, broccoli and cook on medium heat until softened. Stir in curry powder until smooth. Whisk in stock and water. Bring to a simmer and cook 1/2 hour until broccoli is tender. Season to taste.
Puree in batches, strain and return to soup pot. Gently heat with cream.
Serve with sour cream mixed with apple chutney.
