    5 russet potatoes, medium sized
    1 cup lowfat buttermilk
    1 TBS butter
    salt and pepper to taste


1. Peel and wash potatoes and cut into even size pieces (about 6 - 8 chunks per potato.
2. Put in pot and pour water over potatoes to cover.
3. Boil until fork tender (about 15 - 20 minutes)
4. Drain in collander and return to warm pot on stove (but not on a hot burner)
5. Mash in butter, cut in chunks, and then mash in the buttermilk. Mix in the salt and pepper and taste.
