Introduction

Ingredients

    8 Oz. gnocchi or shell pasta
    2 boneless, skinless chicken breasts, cut in cubes
    2 Tbsp. olive oil
    2 Tbsp. minced garlic
    4 Tbsp. fresh basil
    White or black pepper
    Crushed red pepper flakes
    Salt
    6 Cups fresh spinach
    2 Tbsp. butter
    2 Tbsp. flour
    1 Cup lowfat milk
    1 Oz. grated romano or parmesan cheese


Directions

Cook gnocchi according to package directions without salt, Drain.
Saute garlic, chicken, basil, peppers, and salt in 2 Tbsp. olive oil until chicken is cooked.
Chop spinach, in food processor if you have one. Microwave for 3 minutes. Drain.
Melt butter over medium heat in small sauce pan, add flour, stirring constantly. Add milk, continue stirring until sauce comes to a boil. Lower heat, add fresh grated romano or parmesan cheese.
Layer gnocchi, spinach, and chicken in large casserole dish. Pour sauce over top.
Bake in 350 degree oven for 25 minutes.
Makes 8 1-cup servings
