    1 bag Kroger chopped spinach
    1 bag Kroger California veggie mix
    2 boneless/skinless chicken breasts
    2 eggs
    1 cup heavy cream
    1 cup Parmesan cheese, grated plus 2 tablespoons
    1/2 - 1 cup mozzarella cheese, cubed or shredded
    1/2 teaspoon garlic powder or 1 clove, grated
    1/8 teaspoon fresh ground black pepper


Preheat oven to 350 degrees.

Saute or grill chicken breasts until cooked through.

While chicken is cooking thaw spinach and veggie mix; drain or squeeze excess liquid. Set aside.

In large bowl, beat eggs; add cream,1 cup Parmesan, mozzarella, garlic and pepper and stir to combine.

Chop cooked chicken, rough chop veggies (if desired) and add to cheese mixture. Stir to combine well.

Pour into greased 8 x 10 or 2 quart casserole dish. Sprinkle with remaining Parmesan cheese. Cover and bake for 30 mins, remove cover and bake an additional 15 mins.

Serve hot along side a low-carb salad for a yummy and filling carb friendly meal.
