    Butternut Squash, 5 to 6 cups, peeled and cubed
    Water, tap, 8 cups
    Ginger Root, 1" diameter about 1" thick, peeled
    Garlic, 3 cloves, peeled
    Salt, 1 tbsp
    Cinnamon, ground, .25 tsp (optional)
    Nutmeg, ground, 1 tsp (optional)


In a large pot, place squash, ginger, and garlic and cover with water (make sure there's enough to cover everything). Simmer for 30 min or until squash is mushy.
With an immersion blender (or ladled into a regular blender) blend until smooth. Return to pot, add salt and stir well. Serve with a dash of cinnamon and/or nutmeg.

Serving Size: Makes about 8 1 cup servings
