    4 1/2 - 5 Cups White Flour
    1/4 Ounce Yeast
    1/2 Cup Sugar
    1 Tsp Salt
    1 Cup Milk
    2 Tsp Butter
    2 Eggs
    1 Egg White


Mix 2 cups of flour and next 3 dry ingredients in a large bowl. On the stove, heat milk and butter to 120 degrees. Mix into dry ingredients. Add two eggs, blend. Add remaining flour, 1 cup at a time until a tacky dough is formed. Turn out on a floured surface and knead for 6-8 minutes. Allow to rise for 1 hour. Preheat oven to 375. Punch down, separate into 24 pieces and form rolls into clover, knot or twist shapes. Place on a greased baking sheet, cover with tea towel and allow to rise for 30 minutes. Brush rolls with egg white. Bake for 12-15 minutes.
