    1 lb. Broccoli Rabe
    1 medium purple onion, peeled and finely chopped
    3 tablespoons olive oil or avocado oil
    3 cloves garlic, pressed through a garlic press
    Coarse or sea salt and Black pepper to taste


In a large saucepan bring 2 quarts water to a rolling boil. Add broccoli rabe and a pinch of sea salt and cook until vegetables turn color. Once it is done remove from the pan to a boil of ice water to stop the cooking.

Drain well and place on paper towels.

In a medium skillet heat olive or avocado oil until just hot. Add garlic and onion and cook until onions are soft, about 4 minutes. Add broccoli and cook over medium high heat until a dente - tender but still crisp. Season to taste and serve hot.
