Good for left-over chicken, easy to throw together, versatile. Good for left-over chicken, easy to throw together, versatile.

    Barilla Plus Rotini, 4.5 servings
    2 Small chicken breasts, baked
    Spinach, about 3 big handfuls
    Large Portobello mushroom cap
    Laughing Cow Light Creamy Swiss, 2 wedges
    Goat Cheese, 1 serving
    Sun Dried tomatoes, about 4 servings, julienned
    .25 cup pine nuts


Bake the chicken breast and break/shred it up into pieces. Saute or steam one large portobello mushroom cap and a few big handfuls of spinach. Boil the pasta. Slice up the mushroom and julienne the sun dried tomatoes. Mix everything together while still warm to that the cheeses will spread around.

Serving Size: makes 10-12 half cup servings
