    3-4 lb beef chuck roast, cubed to 1" pieces
    2 tsp salt
    1 tsp black pepper
    1 tbsp flour
    3 cloves garlic, chopped
    2 onions, chopped
    6-8 carrots, chopped
    1 parsnip, chopped
    1/2 - 1 cup pearl barley, soaked (depends on whether you like it more soupy or thick)
    5-8 baby portabello mushrooms, chopped
    2 cans beef broth
    1 can tomato paste
    2 whole bay leaves
    1 cup red cooking wine
    2 zucchini, chopped


Coat beef with salt, pepper, and flour. Brown in large pot over medium heat with garlic. Add all ingredients except zucchini. Bring to a boil and simmer over medium heat for 2 hours 40 minutes. Add zucchini and simmer for another 20 minutes.

Can also be done in the crockpot. Add all ingredients except zucchini. Cook on low for 6-8 hours or on high for 4-5 hours. Add zucchini for last 30 minutes or until crisp tender.
