Ingredients

    ½ Tbsp clarified butter (also packaged as Ghee)
    3 oz cooked lobster meat (tail or claw), roughly chopped
    8 spears frozen asparagus, defrosted and chopped
    5 eggs, beaten lightly
    ¼ cup grated Pecorino Romano cheese

Directions

Preheat broiler. In a medium skillet, heat clarified butter over medium-high heat. Add lobster meat and sauté 1 to 2 minutes until fragrant. Add asparagus and sauté an additional minute.

Reduce heat to low, and evenly distribute lobster and asparagus across bottom of pan. Slowly pour beaten eggs over the lobster and asparagus. Let cook 1 minute. Top with cheese and place under broiler. Cook 2 to 3 minutes until set.

Remove from oven and cut into four wedges. Serve immediately.
