Great way to use holiday leftovers for a delicious brunch. Great way to use holiday leftovers for a delicious brunch.

    8 oz. leftover dinner rolls
    1 cup leftover squash
    1 apple, chopped
    1 cup leftover egg nog
    2 eggs
    1 cup egg whites
    1 Tbsp. pumpkin pie spice
    Salt to taste
    Other leftover ham, turkey, other vegetables may be used as well.


Preheat oven to 350 degrees F.

Spray square cake pan with baking spray.

Slice or crumble leftover rolls and arrange about half on the bottom of the square pan.

In a separate bowl, mix squash, egg nog, eggs, egg whites and spices. Blend or mash together until smooth. Pour about half over bread in square pan.

Spread apples (and meat or other ingredients if used) evenly over mixture.

Arrange remaining bread on top of apples, pour remaining egg mixture over bread, being careful to moisten all the bread.

Sprinkle cheese evenly over the top.

Bake about 50 minutes. Cut into 9 pieces.
